Is the cold brew different now?(self.starbucksbaristas)

So the last weeks cold brew one of our customers complained saying it tastes watered down, and it’s taste like iced coffee. I’m almost 100% sure it was made to recipe. One of my coworkers tried it and had an allergic reaction. Fast forward to this week... we made the cold brew, very specifically following the recipe, so it’s made right, however, it’s still causing the allergic reaction, it tastes watered down, and it doesn’t have the right consistency. What’s going on??
Recipe: 5lb bag of cold brew ground course. 7 liters inside, 7 liters outside. 20 hour steep.
Update: while talking through y’alls ideas, one of my coworkers said he got new cold brew filters from the back room that had been there for a while. We’re thinking maybe they have dust or residue on them from being back there for so long. Just ordered new filters so we will test our theory next week

Are the kegs cleaned, sanitized, emptied, cooled prior to adding the cold brew in?

I can’t think of anything in cold brew that could trigger an allergy! They definitely should stop testing that, repeated exposure can make bad allergies worse, but the trigger would have to originate somewhere in the coffee getting processed. That’s bizarre, hope your coworkers okay

Since the coffee grind is shared, maybe there’s a coffee bean that’s been grounded in there that’s been roasted with something else? I know I’m allergic to cocoa and some of the coffee beans have cocoa roast. Same thing with citrus

There are no beans with actual flavoring used in stores. Cocoa and citrus are used to describe flavors from the beans themselves, not added ones. There's no cocoa or citrus added to the coffees.

We cleaned it today anyway, but The thing is she regularly drinks our coffee that is ground in the same machine.

Was your keg/nitro system cleaned correctly? Including the filter, hoses and spigots?

We leave it out in the container during the 20hr brewing process then refrigerate immediately after
