Why do we use cold bar and hot bar pumps? (self.starbucksbaristas)

My opening baristas and I are trying to figure out the science as to WHY we use hot bar and cold bar pumps. Why do we do it??

Most Starbucks drinks have the same ratio of syrup to liquid, 1 pump for every 4 oz. Since Frappuccinos only get filled to the first line, they have, approximately 4, 6, or 8 oz of liquid. In order to maintain that flavor profile across the drinks, we have the cold par pumps which give us 1 pump / 2 oz of liquid.

Which is why we do 2 (for roughly 4 oz of liquid) for a tall, 3 (for roughly 6 oz of liquid) for a grande, and 4 (roughly 8 oz) for a venti.

That’s also why when you *don’t* have a cold bar pump, you’re supposed to use the 1/2/2 ratio and not the full amount of hot bar pumps. But I believe they gave us the cold bar pumps for consistency sake rather than people guesstimating what half a pump is or just skipping it and doing 1/2/2 all the time.

Having different kinds of pumps honestly just made everything more confusing for me considering my store uses hot bar pumps on almost every syrup and I still have trouble sorting out which drinks get what kinds of pumps. I feel like it would be easier to learn/remember if it was standardized.

It would be easiest if we had a full set of each syrup on each bar with the correct pump. Then move iced coffee over to hot bar, and standardize the pumps for cold brew using the CB pumps.

You’re totally right, as a trainer, it’s so frustrating to be like, “If it’s a latte, it gets x pumps, but if it’s a frap it gets y pumps, but if you don’t have a cold bar pump for it, then it gets z pumps.” I get the “science” behind it, but that doesn’t mean I like it.

Especially when they random my decided that only SOME cold brew drinks get hot bars pumps and others get cold bar pumps. Why???

There was an update a LONG time ago that vanilla would no longer get a cold bar pump in it, only a hot bar one but my store has still been using the cold bar one but using the hot bar standard number of pumps for drinks. It doesn’t make sense to me.
