I believe you’re correct on the no foam on sauced based drinks. I’m fairly certain it’s in the training and therefore should be in the Beverage Resource Manual.
However, I believe you are incorrect on the standard about Nitro and mobile orders. As far as I am aware, and my store has had Nitro for quite awhile, the standard with mobile orders is that they are made in the order that they are received. Waiting to do Nitros may have been a standard that a particular manager may have implemented, but it is not an official company standard.

Hm, interesting. Who wants flat nitro? They’re just getting plain cold brew with no ice at that point. :(

I don’t know if it’s standard but unless we are so in the weeds it’s not possible, we hold the nitro cup to the side until they get there since it takes almost no time to make. We explain it to them so they know why it’s not ready when they get there and I’ve never had a complaint. If we are super super busy, it’s likely they are already in store waiting or will be there any minute so we just make it like normal.

This is exactly what we did at my old store. I’m at a new store now where the baristas don’t do this — they let all nitro go flat. I have explained it to most of them, but was hoping there would also be a written standard to back me up, too. My previous SM and shift team were really big on beverage quality!

It’s just the reality of how the drink holds up. If you mobile order a Frappuccino and don’t come right away, it’s going to be melty. Doesn’t mean that we should hold back all mobile order Frappuccinos. Whipped cream melts. Doesn’t mean we shouldn’t put whip cream on hot drinks until they get picked up.
But even if you get your entire store on board with it, your customers will still be getting a different experience if they mobile order from a different store. Because it’s not a standard, it’s a better use of your time to educate your customers about the drink so that they can make the best choices to get the drink they want. If that means waiting a few minutes later to mobile order their drink or only ordering Nitro in person, then so be it.

Right, but the difference is that nitro is supposed to be served immediately for beverage quality. Other items have a 30 minute window, nitro doesn’t. If you don’t start drinking right away, you miss out on everything that makes it good. I don’t think that responsibility should be placed on the customers. A lot of customers don’t even know what they’re ordering, let alone anything about beverage quality. It’s our jobs to ensure that what we’re serving is quality & timely, as well as inform customers.

Yeah we always wait until the customer gets there before we pull the nitro. But if they add sweeteners or syrups, we’ll put that in the cup with a lid so the only thing we have left to do is put it under the tap and pull. And customers are usually thankful that we wait for them

Interesting, I was never trained on "no foam on whipped cream hot drinks." That would make sense, but tbh until I'm told otherwise, gonna just keep making it with the foam bc it takes so much damn time & makes a slight mess to use the spoon to hold back foam.

The no-foam on whipped drinks standard was taken away during the recent recipe updates this year.
That same update included: no more vanilla in HC, no-longer requiring extra hot on sauces and blonde espresso no longer being one less pump of syrup.
The nitro thing is more a customer courtesy. Because the nitro goes flat otherwise.

I saw the rest of those things in the update, I guess I just forgot about the no foam thing? Anyway, I don’t like it. MOP customers are complaining constantly because their cup isn’t full because the foam totally dissipates, the whip starts to melt, and then there’s a bunch of empty space.

My understanding is it’s no foam on drinks with whip. This is because the whip and the foam kinda double up on removing liquid from the equation. If someone gets no whip they get foam unless they ask for that to be removed. On the other hand if someone asks for whip on a plain latte it’s no foam.
Could be wrong. It’s been years since I’ve looked it up.
