All of this! Letting the coffee bloom, as well as pouring gently and in a constant circular motion (like a swirl getting bigger and smaller) are important to making sure you’re getting a nice even extraction. If you pour too quickly or too long in the same spot, some of your grounds are going to over extract and the rest aren’t going to extract as much, so you could end up with bitter or watery coffee. Once all of the water has gone through into the cup, the grounds should settle in a nice flat bed at the bottom of the filter, with little or none clinging to the sides :)
