As an opener (who’s still somewhat new and never got a super detailed training on how to open) and one that usually opens the bar side this is what I do:
1.) starting brewing 2 patches of ice coffee
2.) while those are brewing, grind my first two batches of hot coffee (one shift showed me that she does dark and blonde first, then saves pike for the next round so it’s freshest when we open) put the grounds in coffee filters to the side while the first two batches finish brewing
3.) Prepare the ice tea (fill with hot water) let sit for 5 minutes with timer
4.) By this point the first batch of ice coffee should be ready so I switch it out for the dark and empty into a cube, then do the same with the second patch and start the blonde.
5.) If I have the time before the ice tea timer goes off I put the ice for ice coffee directly in the Curtis and then pour the ice coffee in, or I do this around taking out the tea bags if the timer has gone off.
6.) Finish pouring the ice coffee into Curtis if not already done, then grind up the Pike for the next batch to go into the brewers.
7.) Depending on which shift is opening with me I’ll go and get the sanitizer buckets ready or I’ll move on to preparing the ice tea (ice and water). One of the shifts always gets the sanitizer which is super nice, but I’ve been told by the ASM that it’s technically not their responsibility so I try to make sure I do that if the one shift isn’t there.
8.) Switch out the dark for pike, and the blonde for a 3rd batch of ice coffee.
9.) Switch out the inclusions (for me this often runs into when we’re already opening, but often the shift who I more frequently open with will do this for me because she’s awesome and I’m slow lol).
I’m still figuring things out and it’s always a race/game for me to try and figure out the best way to get this all done before we actually open so I don’t have to add even more multitasking onto doing the drive thru side (for me). If anyone has any other tips or tricks I’d love to hear it, but this is what’s been working for me.
