coffee grinding - help! (self.starbucksbaristas)

hi hi!
I've been an sbux barista in a grocery store kiosk for awhile but never got training on which settings of grind are for what type of brewing method. Most customers know what sort of grind they want and will say "espresso" or "french press" or "flat bottom" and these are already labeled on our machine. However when someone says "cone filter" I dont know what setting to use since it isn't explicitly labeled. And if someone asks me what grind I recommend for their needs I have no idea what to say.

So! I would love some info about the different coarseness and what the various grinds are good for.

(we have a grinder that has a dial on the side, but I cant recall the model; I'll edit later today when I go to work and figure out what model it is!)

edit: we have a ditting swiss grinder. We grind for our flat bottom brewer on a 5.5. French Press is the highest at a 7.0, Paper Filter is at a 5.

Paper filter is what the majority of coffee makers use, which is the same as cone filter. Flat bottom and metal filter are the same. I don't know if you guys do pour overs, but that is also paper filter.

Usually when people ask for my help choosing a grind, it’s either because they want to do cold brew or they want stronger/weaker coffee. For cold brew, grind on French press, it’s the coarsest. I think generally the advice is to get stronger or weaker coffee you use more or less water, but some customers would rather have a finer grind than what is recommended for their brewing method (for stronger) or a coarser grind ( for weaker).
