I don't work until Wednesday, but I found out literally an hour ago that I got a job I applied for a month ago. My start date is after the latest schedule, so I want to put my 2 weeks in ASAP so I can avoid being scheduled and guilted/forced to find coverage. Normally, I would email a "letter of resignation" if I'm not able to bring it in person for whatever reason, but I don't have my SM's email, just phone number. It feels super awkward to make a call about this?? She's left for the day and isn't in tomorrow, but Wednesday is red cup day so telling her Wednesday is really gonna ruin her day. Help. I'm too empathetic and overthinking how to "politely" leave a job.

A two week notice is a courtesy not a requirement for any and every job. You’re allowed to quit and leave any job at any time.

I wrote a note at work and left it in her bin even though she wasnt working. I put the date I wrote the note and what the last day would be, which in your case would be the most recent posted schedule.
