What does this setting do? Like whats the difference between cooking a grilled cheese on regular vs mercato?

It was a pilot food program in some markets with different RTE. The grilled cheese was slightly different so the oven was calibrated to cook it differently from the other one. They phased it out instead of expanding it to the national market but the settings are still there. RIP the smoked mozzarella sandwich tho
