Okay so this is probably a stupid question but I’m a green bean and haven’t been taught how to brew the coffees (like pike,dark,blonde) when opening how do I do that? And also the iced coffee how do I do that?

For iced coffee, you're probably brewing a 9oz bag. It's ground. You just dump it into the brewer and set it for a half batch and hit go. You can let it fall into a pitcher or into the urn and then drain that into two pitchers (1 L each, with 1 L of ice on top). If you go straight into a pitcher, you'll split it into a second one when it's done, top both with ice. Check that the 9oz bag part is true. It's possible that you've got a 5oz bag and you'll brew a quarter batch and end up with a single pitcher topped with ice.

Brewing Pike, Dark, and Blonde depends on your store. Most stores start with a quarter batch of each, but if you're at a high volume coffee store, you might need more right away. Pike and dark get one level black scoop each for a quarter, use the teal handled scoop for measuring blonde. Make sure your brewer is set to quarter batch if you've done a single scoop. Quarter batch = 1 scoop, half batch = 2 scoops, full batch = 4 scoops.

For opening, I brew iced coffee first and then brew the regular coffees as close together as close to opening time as I can. So I start Pike 10 mins before open, then do dark and blonde together 5 mins before open. That way you're not dumping your first coffee at the same time you're unlocking your doors. Then you'll set your timer to 10 mins and brew one coffee at a time every 10 mins, rotating it so that each urn gets dumped and replaced every 30 mins, but you're doing it on a rotation. So at minute 0, brew Pike. At minute 10, brew dark. At minute 20, brew blonde. At minute 30, you're back to Pike. And so on.
