I have a decent amount of social anxiety. While I can’t particularly start a conversation with people I don’t know, I can continue one decently. At work, the only thing that gets me through is speaking like a robot. Not literally. But just repeating the same lines over and over again. “Hey, hun, what can I getcha? And would you like whipped cream with that? Alright, is that all for today? Okay, your total is (money).” And then start up the same conversation with another customer.

I am bipolar, and have panic attacks or sometimes just severe stress from different interactions with coworkers or customers.
In my experience, it completely comes down to who you are working with. My coworkers are lovely and support me, and will cover me if I need to go scream into the void for a minute. Because of them, I’m able to do my job well, and I know that I’m encouraged to take that moment if I need it.
I’m not sure if that entirely answers your question, but I definitely think it’s possible that it could work.
