I got bored so i figured out how to make cold brew at home the Starbucks way. (self.starbucksbaristas)

First let's get some simple conversions out the way:

Water
7L in + 7L out = 14L total

We're going to convert that to ml since it's a much smaller unit that we can make smaller batches with at home. So:

1L = 1000 ml therefore 14L = 14,000 ml

Now that we've got the water down let's get to the coffee. We use one full bag for all that water which is equal to 5 pounds. Let's convert that to grams since again it's a much smaller unit that we can use at home

1 lb ≈ 454 grams
5 lbs * 454 grams = 2,270 grams
5 lbs ≈ 2,270 grams

So now we have a water to coffee ratio of approximately
14,000:2,270

Let's simplify that by dividing each side by the amount of coffee so that we can see how many grams to into each ml of water

2,270 / 2,270 = 1 (duh)

14,000 / 2,270 ≈ 6.17 (it's a much larger decimal but let's just use two decimal places)

So now we know that for every gram of coffee there should be approximately 6.17ml of water.

Now when we dilute it with the chilled water, that's simple as that's just the same amount of water as there is concentrate.

So there we have it. A water to coffee ratio of approximately 6.17:1 is how you can make cold brew the Starbucks way at home. Do with this information what you will. If anyone sees any errors in my math or anything let me know and I can fix it up.

This was a fun experiment! Good job!

However, I would still always recommend making a cold brew extract that you can dilute with cold water to your desired intensity when doing cold brew from
Home. It’s much more space and cost efficient.

That's actually what this is for. The ratio is for the concentrate and then you dillute with equal parts water and concentrate

So how many cups of water to a pound of grounds?

So it's 6.17 ml of water to each gram of grounds.
1 pound of coffee is approximately 454 grams
So 6.17 x 454 = 2801 ml of water
Converting 2801 ml to floz we get 94.71 floz
Converting 94.71 floz to cups we get 11.83 cups
That works out to either just above 11 3/4 cups or just below 12 cups
I'd say go for the 12 cup version cause it's nice and solid, but of course adjust to taste as you go.

Also are you stirring or patting the grounds down to ensure saturation? I'm wondering what is the point to the 7 in 7 out pouring of water at Starbucks... I don't feel like pouring water outside of the bag ensures saturation of the grounds inside of the bag

I personally don't use this method. I've invested in a cold brew tower that uses a much different technique and ratio. This is just a theory but maybe the 7 in is for the grounds more in the middle of the filter and the 7 out is for the grounds more on the edge? This isn't a strictly Starbucks thing though, the (much more traditional) cafe that I worked at before also used toddy and we did the same thing there too. One extra step that we took though was after all the water was put in we would put gloves on and gently massage the filter bag to break up any clumps that might have formed. It could have just been the type of coffee used but it ended up being a much stronger and in my opinion better cold brew.

This makes sense, any idea why starbucks mixes the diluting water with ice cubes before they add it to the concentrate?

Holy math skills!! 😂 😂 So for each pound of coffee approx 12 cups of water? I'm wondering why toddy recommends 9 cups of water for a pound. You would still cut this 50/50 with water? So confusing...

French press grind, dark roast coffee, soak 20 hrs. 50/50 cold brew with water. For the Starbucks way.
