District Manager trying to get baristas to sell from pastry case(self.starbucksbaristas)

Posting on behalf of my fiance, whose DM is trying to get them to sell from the unfrigerated pastry case. Wtf.

Pastries? Pastries are never refrigerated anyway. The only concern is with going stale from being open and flies (if your store has an issue with them). We always lightly squeeze-test with the tongs and/or only sell from the case if it’s getting warmed up.
Cake pops are completely covered in icing and also are food safe for 2 days after being thawed from the freezer.
Some items from the pastry case can be sold safely, but others can’t (like the breakfast sandwiches that have to be in a fridge).
What’s the issue with selling banana bread from the case?

Its not uncommon for flies to get in the cases and at least at my location display sandwiches are also kept in the pastry case which do not keep well out of a fridge

Starbucks does not serve the sandwiches out of the case. Only the pastries that don’t have to be refrigerated

Yeah our case has no issues with insects.. but we haven’t been selling out of it because of covid..

Only ok if that's a refrigerated case. The new Zephyr models (rectangular glass and white marble surface) are not ok to sell from.
