do you guys make any hot lattes that come with whip cream by default with foam or no foam?

examples: mocha, white mocha, peppermint mocha, etc.

i just saw a bunch of baristas on tiktok arguing about it. at my store, we make it with no foam and add the whip cream on top but apparently that’s wrong to another barista and they were arguing and being rude cause it’s supposed to be made with foam. i’m just curious! tiktok is really toxic so i thought i’d ask on this subreddit.

edit: we use the spoon to hold back the foam!

I'm not opposed to them not having foam. I get it, since they already come with whipped cream, which pretty much takes on the role of the foam.

However, I've been a barista trainer for most of my time at Starbucks and worked through the training several times. It's not standard for them to be no foam. I'm pretty sure the recipe cards have foam on them for those drinks, but I'd have to double check.

I understand the reason it would be no foam, but Starbucks standard is with foam.

So about ten years ago the standard was to hold back the foam with the spoon for most drinks including lattes and then at the end grab a spoonful of foam to top lattes or whips for other beverages that had whip. I want to say somewhere around 4 years ago it changed and standard went to free pouring for all hot beverages with or without whip.

As long as you know how to aerate to get the desired foam for the specific drink I.e. cappuccino vs latte then the drink should be fine but I’ve seen baristas that don’t which ends up with not enough drink and mostly all foam and whip.

standard is no foam. if you check your store resources or the recipe card it is stated there.

however i don’t have the patience to actually hold back foam, so i just aerate the milk less and free pour.

I’m pretty sure the standard is to hold the foam back with a spoon on drinks that come with whipped cream!

yes that’s what we do at my store. but i saw 2 baristas arguing over it. and it was an old barista yelling at a green bean telling her that it DOES come with foam and that her whole store should be trained again.

i guess i make them with foam since i aerate longer but i also have no time to use the spoon for every other drink so oh well.

i don't remember ever being taught that in my training so i'd have to ask others in my store!

i make them with light foam but mostly just bc i hate the noise the steam wand makes when you don't aerate the milk so that's why i do light foam buut in my opinion if you get a drink w/ whip it should be expected that there's no foam on it
