What does undertoe mean? I'm new and asked my shift. She was like, "Girl, I have no clue. I have never had anyone ask for an undertoe." 😂😂

More like undertow lol. It’s just the separation of the espresso shot and cream.

from what i learned, you have to take the big espresso spoon and let it sit in one of the pitchers full of ice so it gets really cold. Then you have to position the spoon (we used a shot glass) so that when the shots pour they pour on the spoon into the cup (i put white mocha and cream in mine) and you’re supposed to drink it fast. it was very hot then to cold, it was really good!

You don’t pour an undertow. You just pull the shots on top with a bar spoon held over top the cream or milk, beveled side up, then remove spoon.

Feel the side of the cup after. If you can feel a clear “cold” and “hot” separate sections, you made it right.
