So that’s what the bar made. It was not stirred or shaken, I was window, and they told me it was wrong. I asked if they wanted a latte, they INSISTED coffee. I’m new, but a shift took it and swirled it around in the cup around the corner- said it was perfect after.

Ah, the old "swirl it around the corner" trick. A classic barista move.
Edit: after rereading your post, I also wanna add that some of our customers do this to new partners. They get it in their heads that a new person is bound to mess up their drink, so they say it's wrong even if it was made correctly. Placebo is a very strong drug.

I hate this. We have a regular that insists only certain people can make her drink correctly even though it's made in a shaker and it's made the same way and based on the lines on the shaker every time. Sometimes I just tell her that one of the people she likes made it and she'll drink it.
