When I urnex the tea urns, I'll use a fraction of a packet for each one, fill them with the hottest water from the dishwashing sink, and then set them aside while I wash other dishes.
Once the water inside looks nice and gross, I set them in the middle sink and drain them through the spout.
Then rinse them out and stick them in the soapy water! A few wipes with a soapy rag and a few twists in the spout with one of those narrow brushes, and it's ready for Hobart! Sparkling clean with hardly any effort or extra time.
You may also want to look into using the K-5 packets instead of urnex when doing big sink soaks. They need to soak a little longer, but you use one packet per 2.5 gallons. I think urnex is one per 1.5?

Y'all can laugh at me: but one of the things I STILL miss about working at Starbucks is the Urnex. That shit is miraculous.

the urnex I bought on amazon listed its one ingredient as Citric Acid. I'm guessing the ones we use at the store also have blue dye. I bought a cleaning kit for my Keurig.

Not just citric acid at work - you can see the chemicals listed in the SDS. https://urnex.com/media/document/urnex-urn-brewer-cleaner-us-english-u0818.pdf

Damn, I want my money back now. I want the real stuff!!

I definitely just spent the last bit googling coffee supply stores with urnex in Canada! I currently use denture cleaner for my kettle which works pretty well honestly but I'm sure urnex would be better.

how do you use urnex to clean these dishes? do we just put the urnex and hot water and let it sit?

Yep! I do the hottest possible water from the sink and a few cubes of hot water from the brewer as well. I don’t personally use a whole packet of urnex when I clean them because some of it is bound to touch your skin, but it tears up your hands pretty fast. Restroom cleaner also helps, especially with the plastic on the tea pitchers and the steaming pitchers. Chuck your dishes in and let them sit until the water is cool enough to comfortably clean with, and be prepared to sit there for a while. I alternate between the blue scrub pads and a magic eraser to get all the grime off. Make sure to run them through the Hobart at least twice afterwards, though — these are (obv!) food contact items which definitely need minimum 2 rinses, just like we do with the brewers. Happy cleaning!
