how to do better at steaming milk?? (self.starbucksbaristas)
submitted by BatWeary
we just got the mastrena 2 at my store and ever since i feel like i just can’t steam milk. it sounds like a freight train and doesn’t foam at all, so it’s hard to make cappuccinos or any drinks marked as “extra foam”. any tips?? because my partners haven’t been able to help much

Reg cappuccinos you should aerate to 100° F. Wet to about 80° and dry to about 120-130°. Even on no down orders you have to aerate a little bit.

yeah i always aerate the milk. when we had the old machines it turned out good always, but the new machines it’s next to impossible for me to aerate the milk properly. everyone else can do it fine, i’m the only one having problems

This doesn’t help you at all but my store recently got its third mastrena and it’s an old one, and I’ve been trained on/using the new ones exclusively so when I use it my milk is always super foamy and I can’t figure out why 😭😭 it’s like learning another craft

it just takes some getting used to. play w it in your down time at work and get a feel for where it comes out of the milk and where the balance is. i’ve used both machines and as much as i love the mastrena 2 machines, i definitely like the steam wands on the 1 better. good luck !

i found that if i pull the wand all the way down (i think someone said that’s the grande/venti setting) and then push it up (short setting?) it comes out almost perfect ! everyone at my store does it different

I pull all the way down, I usually start pulling the wand down right as it starts going into the milk. If it’s a cappuccino/extra shots/pumps I use the next size down for the milk
