I was on drive bar for like 10 minutes this morning and did the most perfect stiff foam for a caramel macchiato that held 100% of the caramel. Very proud of myself. (i.redd.it)

At the last second, the customer asked for extra caramel drizzle, so I actually abandoned our training on pretty cross-hatches and just doubled up on the crosses.

Customer: Looks at the crosshatch appreciatively.
Caramel Drizzle: Sits on top of foam looking pretty.
Customer: Stirs Caramel Drizzle into the macchiato.

Some people tell me to stir it, and I just want to save the foam and syrup for last. Or sip it off the top, whichever comes first.

how do you get it to have the perfect foam on top? mines not so perfect, do i have to tap the bubbles out of the milk?

steam your milks until it makes a consistent hissing sound than a random spluttering and then when its done tap it on the counter and swirl to break up bigger bubbles it should look like wet paint and then when you drizzle make sure to use a thin line cause the drizzle is SO heavy

Yea. Aerate the milk somewhere between latte and cappuccino time, then tap the pitcher to get rid of the bubbles.
