So when I chose my insurance plan, I had no idea that my plan would exclude so many doctors, as I had no idea that I would need to see them until after my insurance was set in stone, and the coverage for the treatments I need are really lacking. Medical bills are really starting to pile up and I have no idea what to do. I doubt that I'm able to until November, but is there any possible way to switch insurances beforehand without adding a dependent or moving?

Probably not, but I would try calling them. That's going to be your best bet.
Also, apply for the cup fund. They may be able to help you pay some of your bills.

You can’t get cup fund money for medical bills. Probably some legal rules about it not being medical insurance coverage or something. If you rephrase it as “I can’t pay my rent” because you have paid your medical bills and prove so, then the cup fund will pay you.
