Hey guys, so I’m like 3 months in into being a partner and I’ve mostly been like a mid-closing shift partner. I’ve opened a few times during my first weeks of training and to be honest, I kinda forgot how to open. I remember how to pill the espresso machine, brew ice coffees, the teas, and the kind of stuff. But I forget what’s a changeover and how to do it. All I remember is to basically get new dishes and just pour the content into the cleaner dishes. I forget the day dots, how to tell if it’s expired or not. Your help is much appreciated!

I like to brew coffee last because it lasts longer. It’s only good 30 minutes from when you brew it , so I like to delay it as often as possible. We might have a different set up tho because some of these tasks are done by night crew.

I do that too! And then I pill the machines first. I slightly remember how to organize and day dot the food. Do you have any tips for me?

The thing is we have 2 baristas opening and one shift lead. I open bar, which my process is pill machines, brew tea, , brew ice coffee (4 batches) fill up ice bins, get sanitizer for bar, date everything, finish tea, finish iced coffee, brew pike and prep blonde and dark. I hold off on brewing the other two because no one orders it until about an hour in. The thing is if you’re talking about dating pastries the shift should do that. And then the breakfast sandwiches, our order is getting messed up right now and we get it delivered at night and it won’t fit so they consolidate in the evening so in the morning the other partner just prep food case and rtd&e wall. Sorry if I wasn’t much help

If Youre talking about breakfast sandwiches and pastries , those are dated for us from the previous night so we don’t do that in my Store! Sorry!

Honestly our store goes through everything by one day so our pumps are washed and taken apart everyday. All our frap roast and mocha are dated ofc when they’re made . I just date everything for the same day around 9pm because that’s when the closers clean everything. But don’t follow me haha

the days i don’t date the food and do the display case, my routine is to pill the machines. make two batches of iced coffee and brew dark, blonde, pike, and decaf. make two black teas, two green teas, one passion tea. set out pitchers, shakers, scoops for inclusions, and sanitizer buckets. walk through the bar and check the dates on product & replace what is expired. hope this made sense!

Thank you! Okay so what about like the mochas, chai, frap roast. Lets say there was a Friday sticker and it says 5am. So, when opening I’ll just grab next day’s sticker and basically put the same thing? So I’ll just get the Saturday sticker and also write 5am?

yeah so i don’t remember all the dates off the top of my head, but you’d just grab a sticker for however long the product is good for and date it 5am. https://sbuxdates.com/cheat_sheet.pdf is a great resource for remembering dates!
