I've found I have less anxiety when I point out the flaw to the customer. I think it leads them to trust us more. I.e. Our Barista accidentally used x instead of x, is that ok or would you like us to remake it? 85% of the time they're like "OMG THAT'S FINE!" and 10% of the time they're like "OMG IT'S SO MUCH BETTER THAT WAY"
