Hello! New partner here! So for every dish I’ve ever cleaned(baring the ones that cannot go into the sanitizer) I’ve washed with soap and then the bleach mixture and then put in the sanitizer. I’m coming to the realization that I was probably only had to rise off the bits that were stuck and then put it in the sanitizer and was wondering if someone could tell me which one was right.

technically you are supposed to wash with the blue hose, then rinse, then sanitize with the red hose/hobart.
i’m a closer. so there’s no way in hell we can get through 20 trays of dishes in 30 mins if i carefully wash each one. so i just rinse large fruit bits or grinds or food off, because those wreck the hobart, and let it do the rest. it gets rid of all sticky syrups for you.

I don't use the blue scrubbies for the same reason. It seems to take longer. I like keeping a bar towel in the soap. Then anything thick or staining (like mocha) can get a wipe. But I'm also willing to pick a fight with the mids and tell them not to leave without getting their dishes under control.

yup. generally they just get a rinse from out high pressure sprayer lol.
our store is so busy that we can’t really clean until close. so all the cold bar pieces and small wares, hot bar parts, brewing area and warming area parts, tea containers, empty whips, pitchers, all have to go through the sani at the end of the night

Yeah. We get out late quite often because of dishes. My baristas have seen me go straight back at the DM when he tried me, so I dared him to show me how to wash a dish. It was great. And now he just pays us OT and tells morning they can't just say "sorru was buzy" and bounce

Wash, rinse, sanitize. The red sanitizer and the Hobart are an either/ or situation, dishes don't have to go through both. However, dishes must be fully clean before going into either sanitizer, otherwise you just have hit dirty water left on then.

i wash the dishes with soap thoroughly, rinse them thoroughly, soak what can’t be put in the hobart in the sanitzer compartment, and then put my completely clean dishes in the hobart. i dont do shortcuts when doing dishes because we have to serve drinks out of them. its important that theres no weird residue on them. the hobart isnt a dishwasher

when i close i'm usually put on dishes and i usually spray it off, dunk in soap water, rinse, sanitize, dry. with some dishes i'll rinse them good and then put them in the hobart to be washed and sanitized the rest of the way. if something has gunk i'll rinse it and use a rag to wipe anything off that's stuck. i'm usually able to get thru dishes fast without having them be dirty still :)

2. Soak in sanitizer (if it needs scrubbing, like for blenders and other items that hold residue, soak in blue first, rinse, then sani)
3. Rinse again

Plexi/rubber shouldn't go in the hobart otherwise they'll start to spider/warp

You need to rinse off items that have either sani or blue on them. Even though sanitizer kills bacteria, it's still a harmful chem that shouldn't be ingested
I can't tell you how many times I've picked up an item off the drying rack and been able to feel the chem residue from someone not rinsing.

The Kay5 (red sanitizer) is meant to be air dried. Which is why we replace the buckets after 2 hours, it evaporates. If there's residue it's from poor washing at the blue stage.
If the sani was that dangerous, we wouldn't have a little tray to wipe the steam wands with...

The Hobart machine is an all-in-one, time saving dishwasher — not just a sanitizer. Unless the item is hand wash only, all you need to do is rinse off any food/debris, put it in the dishwasher, and then let it dry.
Obviously dishes will come out cleaner if you do a more thorough job with rinsing, especially things like mocha sauce that don’t rinse off right away, but there’s absolutely no need to wash/rinse/sanitize AND run through the dishwasher. That’s just a waste of time and energy.

Ever take a look at the water in the bottom? It's a recycler. If you turn it off and on again (force a drain cycle) you'll have better results with your shortcut.

It’s not a shortcut, it’s literally following the instructions for using the dishwasher. If your store’s dishwasher has a wash cycle and is connected to detergent, there’s no need to wash dishes before using it. If the dishwasher also has a high temperature sanitizing cycle, then there’s no need to soak dishes in sanitizer before running them through. The three sink dishwashing system is only for dishes that can’t go into the machine.
Also, the idea of constantly resetting the dishwasher to add an extra drain cycle definitely does not sound like a good way to speed things up or be more efficient.

Guess I should have phrased that better. It won't make it faster. It'll make it less disgusting that dirty water is being left on the dishes by putting fresh water in the drain pan. I got this information from the health department. In 2 different counties. Our models are not high end recyclers, so quite a bit of water is kept after each cycle. The cleaner the dishes are to start, the longer it stays good.
Wash, rinse, sanitize is pretty universal and I wish we could actually get the high quality dish washers from my last job. Those puppies could clean the meat off a cow ✨
