hello fellow partners so i’ve seen some debate on the recipe for the shaken espressos. from what i can tell, the card doesn’t say anything about how full the drink should be.
i feel like filling the drink up always just uses soooo much milk and since there’s a a disagreement anyway i figured i’d ask, are they supposed to be all the way full??
or just topped off with some room.

the recipe card does say how much room. its like 1/4 inch or something like that. its not supposed to be all the way full, make sure you’re using enough ice as well. i noticed if you use too little ice, the espresso melts right through it and then theres extra space in the cup. so make sure you fill the shaker all the way to the top ice line for the size you’re making

We are to fill it with milk if they say light ice and do not specify otherwise. If they don’t want more milk, we are to inform them there will be room.

Pretty sure the recipe cards for most drinks do instruct you to leave the standard 1/4 of an inch of room from the top which is just to prevent spilling/burning. Just because a recipe card doesn’t say “make sure you fill the entire cup” doesn’t mean that you aren’t supposed to give someone a full cup of the whatever beverage they ordered. Its a given that you should always be filling drinks up all the way, unless specified otherwise (or it’s totally impossible/unreasonable based on modifiers they choose such as no ice). The doubleshot on ice was always supposed to be all the way full, so these new shaken espresso drinks are no different.
Now I understand the recipes at least in my opinion are imperfect and the volume/ratio of espresso to ice to milk is off. The doubleshot on ice with 5 shots always came out perfect, and now with only 4 shots it’s never consistent. Despite this, I think Starbucks revamped the entire thing and they’re marketing the shaken espressos as milkier drinks instead of how the doubleshot was, which was mostly espresso.

I’ve been told a splash of milk on the shaken espresso but if it’s the brow sugar or the almond milk ones then it’s to 1/4 inch from the top
