When people ask for no ice in a drink do you fill up the cup with extra milk. The recipe cards only account for the milk that is originally in it and they aren’t paying for the extra product usage when it’s over the 4oz? I get doing it on teas but what about lattes and iced coffees??

With “no ice” customizations, there are a couple instances where the “fill to the brim standard” does not apply. Frappuccinos, espresso shots, iced shaken espressos and when the customer asks for their order in a larger cup.

With lattes, iced coffees, iced teas and refreshers you adjust the ratios so that it fills to top.

However, it’s important to note that we don’t adjust/add espresso shots or pumps of syrup when someone orders a drink with no ice.

So a latte with no ice, for example, just gets drowned in more milk.

I believe in a recent weekly update they said shaken espresso shouldn’t be filled to the top unless the customer specifies, but to ask at the register. However, with mobile orders you should assume they want it filled to the top with milk.

From a customer service standpoint, my impulse is to fill the cup. Their repeat business matters more than an upcharge, and we're supposed to treat every guest with the benefit of the doubt. I just don't feel right about handing out a partial cup & it's pretty safe to assume they're expecting the full one.

But the easiest way to know is to check the register. Ring up an iced latte, no ice, extra milk. Does it charge for the extra milk? If so, then we're supposed to leave the room. Start asking every no-ice order whether they want the extra milk/liquid.

Also, I want to say Sbux released a recipe card addressing this last summer - but I think maybe it was just for refreshers and cold bar drinks? I can't remember the specifics. That card'll be in the store resources/recipe index on the ipads.

I have this one regular who comes in and gets like 4-7 drinks all iced lattes with no ice then the same exact amount of venti cups with just ice. It’s irritating and I don’t know whether to give it to them or do it how it’s normally made measurement wise and leave the room. It doesn’t help that they are so rude to you

what does your SM say? they might be able to convince a regular not to order it like that.

then again, they might be using the ice for something entirely different. if they're buying for a whole office of coworkers, some might be coffee drinkers and some might use the ice for red bulls or something? I'd probably just ask them playfully what they need all that ice for, and see what they say.

I definitely remember which recipe card you’re talking about and I’m pretty sure it was just referencing the modification standards for shaken drinks. Like for light ice I’m pretty sure it just said something along the lines of fill liquid to half way up the ice marker. Something like that

I do and I’ve never seen anyone else not fill it up. I’ve never been instructed by my manger or anyone else not to do so but idk? I’m curious to hear what others do

Rule of thumb... and what I tell my team... you as a barista are not paying for any of the ingredients going into those cups... you get paid to give the customer what they want period.
If you let it get to you, you lose... just my 2 cents

100%. You think I want to, at any point in my shift, end up in an argument with a customer about anything? They want no ice, they get extra milk. They complain the drink is too weak because of that? I explain how they need to order it, then remake the drink the way they want. I don't get paid enough to argue with idiots over petty shit.

Things like this seem to be more about a barista's ego than making Starbuck's happy.

I stopped letting this get to me. It’s not worth it. If the customer wants to drink milk, let them. They think they’re getting more caffeine but they’re not. Starbucks can afford to let the customers do this, and will back them up not you. If you ring it in with no ice and extra milk, the inventory accounts for it, just doesn’t charge them. At the end of the day it’s not worth the negative energy! Have fun with your partners 💜

I order light ice with the expectation I’m getting more milk to fill the cup, not bonus caffeine. I’m sensitive to caffeine, but like the taste, just not too strong. So I’m perfectly happy with the coffee being drowned in milk haha.

Edit: it also would never have occurred to me to assume they’d put extra shots in to fill the difference. Wild to me people think they would get more for free seeing as shots are an up charge.

I was instructed in training to fill the cup (unless it’s shady). So if they get an iced latte with light or no ice, they get the normal amount of espresso and syrup and extra milk. I’ve only once had someone complain that their iced chai was too light, and my shift explained to her that when she said light ice she gets extra milk and if she wants more chai she had to tell us.

i really don't mean this is a mean way, but like... i feel like i see some level of confusion/anger at "no ice" drinks pretty often here. why does it matter? the extra product doesn't come out of my paycheck, and honestly i feel it's easier to make a drink without ice than with it (just keep pouring milk vs. carefully watching to make sure i pour to the right line, going to the ice bin, scooping the ice, picking up ice that didn't make it in the cup, etc.) maybe it's because i typically don't get ice (prefer my mocha milkier, and don't like my refreshers/any drink to be that cold.) i don't think it's always necessarily done with malicious intent. ("scamming" for more product or something like that.)

(note that shaken espressos are exempt from this. if you get those light/no ice you're ordering the wrong drink.)

It’s just when people are extremely rude about it and we have multiple people telling us different things so we are just trying to find the standard so we don’t get in trouble and can explain to customer if we do that or not

Even if Starbucks puts out a standard saying “Fill all drinks requesting no ice with milk” there’s always going to be those few baristas who will try to prove they’re right, even if the actual company is telling them they’re wrong

I will say, when I order a shaken espresso, I do get light ice, but I'm not really asking for a small amount of ice, just for less than the standard because I want to drink my coffee, not chew ice lol

I was trained to fill the cup up. With like iced lattes and stuff I see nothing wrong with it, but what I don't like is when we get orders for a Trenta refresher, no water, no ice. It's like sure here's your carton of juice. That's what I think should be an extra charge.

last weeks weekly update mentioned that the new shaken espresso’s need to be marked extra milk if you want to fill it all the way with milk since it’s designed to only have a splash of milk. if they ask for light ice, you need to leave room, unless they ask for extra milk

i would do it for them the first time and just let them know like “hey next time, make sure you specify extra milk so your drink is full” and just let them know it’s corporate policy

I’m so confused on these new expressos because on the recipe card since day one it’s said fill milk to the 1/4 inch below the line so I feel like it’s always been full when I make them

Yes, but because the drink is mostly ice/espresso and foam that is just topped off with a little bit of milk/alternative, once the customer asks for the light ice you’re not gonna have as much volume in the cup, hence the extra milk. Which then changes the whole drink at that point to more of a latte than a shaken espresso. I don’t think customers really understand what the drink is supposed to be, which makes it kinda frustrating because everyone always asks for light ice, when the drink literally is ice! 😂

Yes! Well the update suggests that we should ask the customer first if they want the extra room left in the cup if they order lt ice, and if not then we are to top to 1/4 inch below the rim with milk/alt. Although I’m from Canada so ours could be different too!

Someone actually got the new brown sugar oatmilk shaken espresso today minus the ice and it was.. interesting lol.
Like I’d somewhat understand a latte with no ice but c’mon she literally didn’t know what she was ordering 🤦🏽‍♂️
the person on drive made it just as it would be with proper portions just no ice and once she got to the window she was kinda confused and questioned why it was so little but after explaining that THAT’S what she asked for she took it as it was anyways then called ~30 mins later complaining about her drink being so small and we told her that’s literally what she asked for and the ice is part of the actual drink, I even offered a remake/refund but she literally was just calling to complain like???

Come on. No one buying a $6-8 drink expects to get a half empty cup. They expect it to be filled with milk, and based on what I’ve read here, so does corporate. She was right to complain.

Malicious compliance has no place in customer service. Giving the customer what they expect, not what they exactly ask for if it’s obvious they are confused, is the goal since most people are not coffee experts. They just like the picture they see and want that without a ton of ice. It’s a marketing fail that didn’t adequately educate the customer, many of whom get coffee light ice as a regular thing and don’t see the difference.

At the end of the day, you let a customer walk out with a cup half full of coffee and half full of sadness.

Then they should get uncharged for more milk and we can do that, just need to ask customer first. If you want milk to replace the lost ice volume it costs more.
