stores can vary in their nightly duties but i’ll tell you what my store does.
• sweep/mop back floors (cafe floors get done in the morning or as needed)
• break down and clean espresso bars
• clean the syrup area between the bars
• break down and clean cold bar thoroughly
• take out garbages
• clean brewing area
• clean warming area and ovens (usually done in the early evening)
fridges get cleaned and restock happens in the morning at my store because we don’t have time. and by the time we close, we’re usually already done one espresso bar, syrup area, ovens, and have a start on cold bar and/or floors. there’s usually so many dishes and we struggle with that the most.
