You can’t shake hot espresso in a shaker without ice. It’s a burn hazard. The lid pops off if it’s just hot espresso.
You can shake it with ice and strain it leaving the ice in the shaker, but that’s the best you can do.

agreed. so no, i don’t shake no ice shaken espressos. but i will shake no ice teas/refreshers to mix!

Always for cold drinks, unless it's ordered unshaken. It helps stir in the sweetener and makes sure that everything is mixed well, although personally I believe that shaking is mostly for "with ice" drinks to make sure everything is cold.
Speaking as a primary closer, I would occasionally have slow nights where if somebody ordered a tea no ice, I'd offer to shake it with ice but serve it without, since our tea sits at room temp. Not something I recommend ordering if it's busy or anything, because it can be inconvenient, but it was a nice thing I'd do for my nighttime customers lmao

If they ask for no ice, I don’t shake it. I build it in the shaker and then pour it into the cup to mix it. The only exception is matcha drinks. For those I will build it as if there is no ice (milk to the top line), then add ice, shake it and strain out the ice when I pour it. I can’t, in good conscious, give them a chunky mess.
