I don’t often get asked for surprise drinks, but when I do I get so stumped, especially if there are specifics like no caffeine or hot. I drink mostly iced, loaded with caffeine drinks. I never give people my favorite because they get pissed off (literally just nitro with soy) because it’s not sweet enough or “too boring” and I’m not a very creative drink person
My usual go-to’s are VSC cold brew, 2 pumps white mocha, VSCCF with cookie crumbles.

iced Mocha or White mocha with strawberry purée foam
for non caffeinated i do either a salted caramel white hot chocolate or a lemonade with raspberry and strawberry açaí base

Don’t want to be a Debbie downer, but... You should not let people order surprise me drinks, for 2 major reasons. First, we have no idea if the individual may have an allergy to a certain food item and by “surprising them” we may not inform them properly/they may not understand something in their drink could be a food they are allergic too. Second, if they dont like it, its a waste of product because we will need to remake them something else.
Instead what I would recommend is helping a customer choose a drink by explaining our drink options/some choices to them. I suppose if you fully inform them of the surprise drink you are making them before its done that is fine. Otherwise we are taking a risk.

FYI strawberry acai base has caffeine. A grande strawberry acai refresher has the caffeine equivalent of about 2/3 of a normal espresso shot (or a trenta green iced tea). You're probably not using that much if you're just adding it to a lemonade, but I'd still probably avoid it if you can. Adding passion tea or juices would be a better option.

I was never in favour for "surprise me" drinks. I always followed up with "I can totally do recommendations! Do you have a drink that you currently really like?" And then I just follow my mental script for drink recs. That way I make sure they get something they like lmao
My mental script is, if they don't have a drink they already really prefer, to flesh out a basic drink. "Do you prefer sweet drinks?" "Do you like the taste of coffee?" "Are you looking for something hot or iced today?" etc. Then I just base it off of that and what I personally think is good.
I always give them simple drinks in case they want to order it again on their own, for the sake of the next barista that has to deal with it lmao and because of that I try to avoid giving people frappuccinos lolololol
Non-coffee/dairy: Iced chai, 2 pumps vanilla, VSCCF (for non-dairy, use oatmilk and no VSCCF)
Frappuchino: Matcha, white mocha, java chips, peppermint, cream base (mint chocolate chip frappe)
Non-caffeinated: Lemonade, raspberry pumps, passion tango poured on top

Yeah I don’t want to be a downer either but I generally just go for a caramel macchiato or a wm ... sometimes even just a water and let them know it’s important to ✨stay hydrated✨
