I've worked 3 different food service and 2 retail jobs, been a manager at a fast casual restaurant, and worked on 5 different POS systems, and this Starbucks POS is absolutely horrible.
It's actually incredible how bad this is. I do work at a licensed store so idk if it's an old system or different from the normal starbucks, but damn. The entire POS is so incredibly needlessly complicated and should not have so many different menus, in different orders, for the same drinks.
I know I'm just new and struggling with it, but damn I feel like any high school kid taking a programming class could make a more efficient and user friendly POS.

It's a gross mess NGL I took photos of it to include with other cheat sheets I look at while relaxing at home, it has helped, I don't care if it's working off the clock, I won't be doing it forever and it makes my time on the clock better. My "pre Starbucks" brain equated things like Mocha and Caramel Drizzle with Syrup and it tripped me up so much looking for it on the syrups page because in my brain it was just "sweet stuff I won't touch anyway." But now months later those things are like building blocks to me so I guess I've acquired a little bit of an Sbux brain

Starbucks POS isn't perfect, but it's nowhere near the worst.
I work in Safeway Starbucks, with the Starbucks menu just dropped in Safeway's system essentially. It is horrible to use, it is not designed for Starbucks menu.

And nothing is in any logical order. I don’t charge for things half the time because I can’t find it. I really wish I could re organize myself

I think this might just be your particular store. I’ve been a manager at various restaurants throughout the years, and I’d say Starbucks POS is the most user-friendly. The tabs organize the menu pretty well, and it’s usually pretty easy to find where to start, if you’re a newbie looking at the starting screen for the first time.
I’ve never had issues with the POS, but I might have a different system than you, so YMMV

It’s a big improvement over when I started. It was Windows 3.1 based, if I’m remembering correctly.
