Pour your milk from higher up right through the middle, slow enough to keep the crema intact, until about half an inch from the top. Then bring your pitcher close to pour your last bit of foam in a dot:) (its the only one I get right every time)

I never get a good dot on alternate milk flat whites. Pretty consistently decent on whole milk tho.

One of my proudest moments as a partner was making a perfect Flat White when the DM and his crew were visiting the store and I was randomly on bar. Can’t make a bone dry cap for shit though

It’s all about the pour. Pour slow, pour from really high up, and as you get to the end of the pour, go in for the dip and pull back again.

That’s how you get the little dot.

I like to think “pour one out for the (fallen barista) homies” and the automatic body movements that accompany the gesture.
