Need tips/advice on breakdown (self.starbucksbaristas)
submitted by breezyloverx5
Hi guys!! I’m new to breakdown and was wondering what tips/advice I could get from other baristas to make breakdown faster, simpler, and more efficient for me! I’m struggling a bit with getting fast at it and I want to be quicker! The support and help is appreciated :)
(Also idk if all stores use the term breakdown but in case not breakdown at my store is when we switch all the containers, and rinse the syrups, take the stands to wash and whatnot)

Bring the whole dishwashing rack to the front when you’re bringing back dishes. Makes it a lot easier. While the syrup holders and such are washing, starting wiping down and prepping the area to put them back. Wiping down all syrup splatters and such.

If there is more than one of something that constantly needs to be used (like espresso machines/sinks/ice scoops) I like to break down all but one at once. So basically always leave at least one functional appliance in place while they are washing.

It reminds me of sequencing drinks! Like while you wait for the blender to finish (dishwasher) start prepping other drinks (cleaning the station)

*Remember to detach the pitcher rinsers and wash the bottoms because my goodness I’ve seen them not clean and they get MOLDY underneath.

Wow!!!! Thanks for all the advice, I’ll definitely start doing all of this! The only thing is that we don’t use the dishwasher. We wash everything by hand 😩

You should! We got an update that we can start using it as a dishwasher. Just need to remove any “3D debris” or anything that dishwasher generally won’t remove

might seem obvious, but one thing that helps me with the syrup bottles is definitely using hot water or (if an espresso bar is available) putting the bottle under the steam wand, wrapping a rag around the whole thing(making a lil tent) and then steaming it for a couple seconds. breaks down all of the crusted up sugar pretty instantly
