My store did not use whole milk in flat whites, or the -1 pump in macchiatos i think. Just me?

Those are both standard, check the recipe cards. The macchiatos get one less pump because of the caramel, and I was told the flat white gets whole milk to balance the flavor of the ristretto shots.
