Ristretto changes the ratio of coffee to water by reducing the amount of water. A single ristretto shot should be less than an ounce.

Updosed changes the ratio of coffee to water by increasing the amount of coffee. An updosed shot will still be the standard 1 ounce, but be stronger because it brewed with more grounds.
