Help on cold brew. (self.starbucksbaristas)

Does anyone have information about instruction on how the make cold brew concentrate? I have a seriously insane new manager and she is constantly telling me I'm doing things wrong. I have been there 5 years and had 7 managers so far. She told me I'm making cold brew wrong. The way I was trained was grind the whole bag on course pour the grounds into the filter the add 7 liters of water over the top of the grounds tie the filter then pour 7 more into the bucket and let it sit for 21 to 24 hours.

She insisted I am supposed to pour the first 7 in the bucket with no filer and no grounds. Then put the filter in pour the grounds in and tie it off and pour the remaining 7 over the tied bag. I can't find the instructions on making it. Please help

Nah, you’re making it right. Your manager’s method doesn’t even make sense. How are you supposed to put an empty filter in 7 liters of water without like, sticking your whole arm in it?

The only thing that might be slightly off is I’m pretty sure the coffee is supposed to brew for exactly 20 hours when we make it in the store. I think 21 to 24 hours is the recommendation for making it at home (someone please correct me if I’m wrong).

Wow ive never heard of anyone making cold brew the way your manager is saying. The way you were doing it before is the standard way

You are making it correctly except for the brew time, it should be 20 hours. There is a Brewing Cold Brew Quick Reference Guide, also should be in Beverage Resource Manual, that shows the correct method which is what you’re doing, except for time.

Yeah I was trained 7 in and then 7 out not 7 out and 7 in 😭😭. It’s like a chai tea latte and you put hot water before milk

You're for sure making it right ! The way your manager describes their way makes no sense to me. The grounds wouldn't get wet in the center.
