It’s been scientifically proven that stress doesn’t cause ulcers, but can cause issues with them. You NEED to see a doctor if you’re passing out. Most will work with you regarding the financial aspect of it but you’ll need to talk to them about it.
If you feel overwhelmed with the stress it may be beneficial to cut back your hours and change your availability to not work during peak. But it’s also important (and cheaper than going to the doctor often with issues) to eat carefully and for the health issues that you have.

I mean. I think step one of this is much more medical than Starbucks. Do you know what is causing your ulcers? I don’t know anything about ulcers, but if it’s the kind if thing that is definitely going to get worse, it sounds like your choices come down to “try and make it into a doctor’s appointment and pre-empt it” or “Suffer and put it off and end up in the hospital with massive bills anyway.” There are possibly programs to help with this, but that’s not a Starbucks based topic or something I happen to know about.
We could argue that your SM needs to be more attentive and talk about accomendations or getting some extra break time or whatever, but nothing Starbucks-wise solves your underlying medical condition.
Do you have sick time? You can use that for any shifts you miss due to a doctors appointment. You can honestly purposefully schedule it for a work day so you can keep your pay. I just wouldn’t tell your store you had a choice when scheduling.
