The almond croissant is the best pastry. The filling is similar to what’s inside Panera’s bear claw. So really this is just an almond croissant appreciation post 💖 (self.starbucksbaristas)

The filling is called marzipan, it’s widely made with almond extract and is delicious. my grandmother used to make marzipan pies for my brother and I. Every time I eat an almond croissant it makes me think of her.

The filling for the croissants, and bear claws, is actually almond paste... Marzipan is similar and both are made from almonds but Marzipan is more smooth and sweet and actually firm enough to be moldable on it's own. It's fondant like, and more like candy than a filling. Almond paste has a coarser texture and less sweet flavor but is also softer and makes a nice pastry filling. Especially when paired with a hot sweet drink then it's not so overwhelming sugary.

My grandma grew up in Switzerland and I've grown up with both the americanized almond paste creations such as bear claws that were my grandpa's favorite.. and marzipan treats like chocolate dipped marzipan logs from the German deli at Christmas, and these amazing swiss Christmas cookies called Biberli that are filled with marzipan.

Almonds really aren't given enough credit for being as amazing as they are.

Everyone here is too young to remember the Toffee Almond bar. For being a frozen/thawed piece of crap like everything else, it was worth getting up at 330am for. I’ve found online versions but I’m too lazy, I want that just unfrozen square of oil and sugar in my mouth.

Keep an eye out in your local Walmart bakery section. They have something almost identical, at least in Texas they do. I once ate an entire tray of expired toffee almond bars after a closing shift. I regret nothing.
