It’s a small book that you can use to keep track of all the various coffee blends that you’ve tried out! Each entry has sections where you can write the flavor profile/notes, acidity, body, etc. of the coffee that you tried out! Hence the “passport” part, because you can keep track of all the various types of coffee from different regions that you’ve tasted!

We day dot the powder and inclusions for 1 day to know that the bar pull was successfully done. A way to keep each other accountable for doing the bar pull when it needs to be done.

Some of those you have day, but it is 24 hours or 48 hours. This distinction is important because you need to know the time it was made.
Like mocha, whip cream and chai are all 24 hours. If you just do the 1 day, you might throw it out too soon or use it past the expiration.

I had an ASM that I’d close with and if the iced teas were made at say, 7pm, he’d tell me not to throw it away since it was good till 7am. Like, sure technically that’s true, but opening ritual involves making tea, brewing coffees. It just felt so wrong to leave it because I KNOW how openers are (because I was one mostly) and if saw tea not emptied and cleaned I’d be like “that the hell were they doing last night?”

This amazes me, at my store Starbucks pays minimum a dollar above min wage. And shifts a minimum $5 above. I’m not saying it’s great but I definitely think it’s better than most of the job offerings in my area. Even Costco has a lower starting base.

Our store doesn't store them on the counter (our cold bar is TINY) so we keep them in fridges, although we go through so many we really COULD just date them for a day and nothing would change.

We premix our lemonade to put in fridges and therefore only lasts 48 hours.
