for the nondairies that don't foam as much aerate it a little longer and after aeration hold it so the steamer is just below the surface of the milk so the milk swirls while steaming and pops the big bubbles thus creating a nice microfoam. and when you catch the shots if you're able to tilt the cup so the shots slide down the side instead of straight to the bottom you won't have any bubbles in the foam. when you pour the milk, pour from higher up in a thin but consistent stream (so the milk goes below the shots rather than mixing with them) until it gets closer to the top then you can bring the steam pitcher closer to the cup and pour a little more to create the dot. once you master the method you can literally make perfect flat whites every time even with non dairies!!!
