I would call the DM if you think they’ll do something about it immediately.
If not, I’d go straight to the health authorities.

You need to have a pest inspector come, they’ll decide how to deal with it. Every SSV should be checking for pest activity at the start of every shift and documenting control measures if they find any.
Offhand I’d guess maybe the tube taking away waste has a kink or is blocked and has maybe built up growth media for flies to lay eggs in? In any case, pouring boiling water down the espresso machine may help.
No matter what, have your SSV/ASM/SM/DM call a pest inspector ASAP.
If your SSV isn’t confident about calling the regular pest inspector themselves, have them email asking the SM about it using the store’s email, so it creates a paper trail. If the SM emails back saying not to call/doesn’t respond you can forward it to your DM, ideally with pictures of the maggots & flies. Boom. Problem will be fixed, I promise.

I’d go straight to your DM and public health! The last thing you want is to be shut down and possibly sued if something gets in a customers drink. Cover your butts and contact someone immediately
