When making an iced espresso, do you do shots first then ice or ice first then shots? There is no recipe card anywhere I’ve looked & this has been an on going argument between a partner I work with & I. Just wanna know what others do.

Shots first, always. For customers and for myself while at work, and for myself in my own home.
Directly pulling shots onto ice shocks the espresso and causes for a much more bitter experience. That's also why we add ice last when making an iced latte.
Try an iced blonde doppio both ways; you'll almost instantly notice. Blonde espresso should be on the sweet side, even when iced. The second or two it takes for the crema to rise above the body before you chuck the ice in the cup makes for a drastic difference in the flavor.

How would this be with no sugar, syrup or milk? I’m a black pour over drinker, but I’m intrigued. I’ll try it. I feel cut off from espresso beverages in the summer because I don’t enjoy sugar, syrup and a lot of milk

I love me an occasional quad espresso. Just straight. No sugar syrup or milk. You should try it one day! It’s very different from a pour over. Complete different acidity and body. I hope you like it :)

Interesting, I had a man fuss at me that this was the way he wanted it maybe my 2nd time on bar 🤷♀️ he ruined me 🤦♀️ or maybe my sm watching me do it like that time and time again and not saying anything to me...but almost every person that comes and orders it from my location was just grabbing it to pour their protein drink in. Oh well I put my notice in 2 weeks ago anyways to start my new job might go back for 1 day a week idk but at least I know now

Idk, I was taught ice first while giving the cup a good swirl while the shots pull. It incorporates with the ice better compared to shots just sitting at the bottom with a bunch of ice stacked on top of it.
However, I do shots first before ice if there's a sauce, like mocha/white mocha. That way the espresso can integrate with the sauce.

Espresso first. Swirl half a scoop of ice around to melt it a lil and then top it off with the rest and add the desired milk/alt topping:)

I make it wrong but if it’s black water to the first line, shots (which takes it to the second line, then ice.
I pull the water while the shots are getting ready and then if I leave it for a second the shots won’t die. I always do that with hot americanos because you have to prime the water to make sure it’s hot enough, so I’d prime it, dump the water and fill the cup back up half way with water, add shots, top with water. I carried the habit over.
Technically it’s shots first.

No likely won’t be anywhere because these are completely customized drinks and there is no standard… however it should always be espresso first (unless there’s syrup, then syrup first to mix together), and ice over the shots. That’s how I’ve always made them and never get complaints - shaken espressos are a different standard because they’re real menu drinks
