The way I break it down is into 3 parts:
1. Aeration - the foam has to be dense, but not too thick. It varies from bar to bar but this is the easiest part. Just a few seconds of that light “paper tear” sound. Make sure you move the steam wand to the side of the pitcher so it’s almost parallel with the sides of it. You need to circulate all of the air throughout the milk.
2. Contrast - needs to have extra shots/mocha for solid contrast between clean foam and mixed
3. Pour - create a steady stream, if you pour too quick you’ll lose your “drawing” foam, too slow and you won’t have space to draw the design
You can get art out of all the milks except nonfat, heavy cream, and coconut
All three parts need to be perfect with starbucks equipment to achieve decent art. The pour is definitely the toughest, but once you’re solid with the first two bits you can literally just watch some vids of pours and practice yourself.
If I can find some time during a break, I might try and bring my tripod to work to make a short tutorial vid….
