I have a ssv who claims it’s totally ok to leave the pastry case full overnight and reuse the display pastries and sandwiches… is this normal?

Its just for display, you would never want to eat those anyway and it's such a waste to throw them out every night

Nope! Pastry case must be left empty over night. Old standard was that pastries where put in a container and covered over night to put for a total of two days in the display case, new standard was to be thrown out each day and only pastries still in wrapper are good for 48hrs.

Depends if it's exclusively for display or not. We use the pastries on display, aka a "live case" where we grab a pastry and replace a pastry. If that's how you use the case I wouldn't leave it overnight. Throw it out.

NO. Change out all the dishes every night, NEVER serve or offer pastries from the case to customers or partners.
I am a shift and work opens mids and closes weekly. I will NEVER offer a customer a pastry from the case if we are out unless it’s like 8am. I’m not trying to have a stale over priced pastry - heating it in the oven makes it worse.
For context my numbers start with 192 I have been a shift since six months after I was hired and have been a GM in restaurants prior to sbux.
Don’t give your customers shit product, they won’t come back.

Its pretty gross, but as long as it's absolutely labeled and understood universally to be display only... Not the absolute worst.
Amazing way to get cockroaches though. And it really doesn't save a ton of time in the grand scheme of things. Its disgustingly easy to overlook the case if it's not done nightly and you end up with fuzzy food... Not cute.

Well we had a BUNCH of flies this morning and we already have an established mouse issue… we’re kinda out in the country and it’s a very hastily built brand new store with lots of entry points for mice. 🤦🏼♀️ so I can’t understand how leaving food overnight would be ok.

Oh yeah that's 100% not okay. Some waste is to be expected, but usually at stores I've worked at we'll sell from the case for the last hour of close or otherwise give away the pastries (surprise and delight!), so they're not wasted even if donations won't take them.

Oh, that’s super not okay. We leave ours when we can (aka when SM isn’t coming in) because we don’t get enough product and the waste is morally disgusting. But flies and mice are a much bigger issue and you’re in the right for sure.

My store started doing that after awhile just cause we could not stand throwing away so much food. Make sure to date dot it tho so the food isn’t left for more then 1 overnight or it starts to look really iffy

At my store we dont have a ton of food to sell, so we have a system to empty it 3 times a week. So it gets filled every mon, wed, and fri. Its only the egg bites that look bad really after more than a day
