shaken espresso w/ no ice standard? to fill or not to fill?(self.starbucksbaristas)

someone ordered a shaken espresso with no ice today. they were fine with it being shaken with ice and strained into the cup, and i was taught that it only gets the 4oz of milk like normal — so not filled to the top. if it’s light ice i fill it, but not no ice because that’s a drastic amount of milk. they were incredibly rude about it and told me “the other starbucks” always fills it to the top. i refused to fill it unless they wanted to pay for the difference in extra milk, which they didn’t
so tell me y’all, if someone orders a shaken espresso without ice does it get filled to the top or no??

My response when someone said “they do it at this other store” was always “well they shouldn’t be. It’s against standard. Which store is that so I can have my manager contact their manager?”

at my store, the way we've tried to reconcile this problem with customers is giving them the option of an iced latte with no ice or having a shaken espresso with the ice. majority of the iced shaken espresso is the ice, if you don't want ice, don't order this beverage.
and when customers give you the line "the other starbucks" just say my shift or my manager has us do it this way and leave it at that, or they don't like the way your starbucks does something, they can go to another store (not to be unkind, but they usually just say that to get what they want or to get free stuff)
but everyone at my store has been firm on not filling the shaken espresso with milk, because it is against standard. ask your manager tho! let her/him know that customers are asking a question that you're unsure of the correct answer for! good luck (:

i asked 3 of my shifts who were working today and all three said not to fill it 🤷♀️ it’s definitely one of those things that isn’t consistent everywhere…

Don’t shake it. “We’d be happy to prepare your 3/4/5 shots plus syrup and a splash of milk of your choice but for safety’s sake we cannot shake hot espresso shots without ice.”

I don’t mean to sound inconsiderate because I actually do care so much about my job and my partners, but none of us get paid enough (even myself as an ASM) to care. The only one losing money in this situation is corporate and they definitely don’t care. They care more about customer satisfaction and I care more about my partners not getting into a bitching argument with customers. Just give them the fking milk, it’s not worth it, who cares if they”are getting more milk for free” let them enjoy their wayy watered down soupy mess and if possible use lukewarm milk with no ice if you feel like being a dick to the customer on the sly.

Standard is to charge for non-dairy milk substitutes in the Shaken Espresso and the recipe calls for milk to the top now instead of a splash, so why would you not fill it to the top? It's not like it's coming out of our pockets.

we just went over this at my store the other day. if they order one with no ice, don’t fill the cup to the top, and if they say they want it filled all the way, you have to charge them for a latte

we charge for the milk on shaken espressos even though we didn’t with doubleshots (which is what most partners who don’t look at recipes & think the shaken espresso is exactly the doubleshot do) isn’t so idk the real answer on this one and would love to know

My manager says it isn't worth it to argue w customers over shit like that ("it doesn't come out of ur paycheck so why are you pressed about it") and I don't make enough to question him so i don't care anymore :-)

If customer orders in cafe you have to ask their preference.
If customer orders through MOP you fill it to the top.

Technically the standard for milks is to charge for shaken espressos (idk it was in a weekly update a long time ago) so I'd tell them it's supposed to be charged to them anyways

I would wait to fill it, and then ask when they got there. I would explain to them how the standard drink goes and your confusion on their no ice request so you just wanted to clarify what they wanted. I would tell them customers prefer it both ways so you just wanted to make sure.

There’s this one lady that comes to our store and orders 2 triple espressos over ice in a venti cup, one with 5 pumps of white mocha and the other one with 4 pumps of white mocha, with a “splash” of half n half. Every single time we have made her drink she has complained that we didn’t put enough half n half. My ssv explained to her multiple times that she would have to pay more for extra cream but she still insists we fill the drink up entirely with cream. We just started filling it up with as much ice as we can, wait for it to melt, then put more ice. We will even melt the ice a little bit ourselves with hot water and put more ice. Then we put the correct amount of cream for a “splash” of half n half. She seems satisfied now.

We were told out our location that if it's included in the recipe build and they want extra then we don't charge. We only charge if they want breve, heavy cream or alternative milk instead of regular milk or more then 4oz in a drink that it doesn't come in.

my old store did things right, but since i transferred to my new store every time we get a shaken espresso they top the milk all the way up, light ice or not. and then i get in trouble or yelled at by customers when i actually do the right thing

Yeah I don’t see why it wouldn’t. The drinks pre set price often includes a total similar to that if you were to ring it up as a iced doppio espresso with milk and syrup.
