My inclusions aren't even lasting a day before they start to clump, what can I do to prevent this. This is just my Dragon fruit but its happening to all my inclusions (i.redd.it)

Humidity causes this. A way to make it less likely is to shake the dust out of the bag before putting it into the container. Open the bag and hold the bag upside down, keeping it shut with your fingers, and shake the dry dragonfruit dust off into the trash.

It's from humidity. There really isn't much you can do other than using plastic wrap instead of the lid to get a better seal.

Make sure you dry up your inclusion containers before putting inclusions in it. Some of the partners at my store are baffled by this and all it is is drying out the container lol

Humidity is a huge thing, but as a partner in Indiana, I can also say it matters where you store them. I realized they clump up when placed around the heat of a bar or near our sticker printers. So now we store them aside from basically everything except lids.

nah, they're on risers on my milk fridge. if anything spills they don't get wet, the spill goes right under the riser. we started having trouble with clumping around June but they used to last longer than a day

Hm, aside from them getting wet on bar or when being prepped or stored i can't think of a reason why they would be doing that. Unless your store just keeps getting bad batches?

We used to put them in the metal tins you use for coffee grounds because they have a lid that seals. It's a life changer for keeping them from clumping

Ours don’t last a few hours because without clumping. The humidity is so high.
We just struggle. 🤷🏼‍♀️

We broke up one bag of incisions into like 3 containers. More dishes, yes, but it prevented this.

sometimes i have to throw away half of the inclusion bubble because they’re all stuck to the bottom! it’s a pain and super unfortunate

I hear a lot of people saying its the humidity. They are right.
There used to be plastic covers for inclusion tops when I worked at sbux. If you don’t have them, ask your manager- they may be able to order them still!

The store I used to work for kept the dragon pieces refrigerated when we first made them. Maybe when you don’t need them and there’s some down time, you can put it in the fridge to keep it from clumping. That’s my guess, at least
