Tips for pastry case side of opening? (self.starbucksbaristas)

I'm better at opening bar and find I'm very slow opening the other side of the store. Help

It either takes me 15 minutes or an entire hour, there’s no in between. However, my best advice would be to memorize the set up of the pastry case and then to just convince yourself to move as fast as humanly possible, which isn’t the most helpful advice but it’s the only thing that’s worked for me

I can either bust out the pastry case and have time to rotate food or I'm too slow and end up struggling to DTO and rotate food at the same time
I have the Fall 2021 pastry case memorized but just struggle still, I guess. Oh well.
