I've been a barista with a tiny college campus starbucks for a year now, did my training here. there's literally only been 4 people who've ever worked here. When I was shown how to make an iced Matcha I was told to make it in the shaker, that's even what the recipe cards I trained with say. My issue is that it foams... alot. I've noticed that when I order a matcha from other SB locations there's no foam? is my location doing it wrong? was I trained wrong? I know this probably sounds dumb but I'm so confused, I've only ever worked at this SB and currently there's only one other girl working here with me and she was trained here like me.

Now yes the matcha does make a lot of foam, but a simple way to make sure someone gets enough drink is to hold the foam back to get the rest of the liquid first and then top with what is left.
Like holding back ice on a drink, use the shaker top to pour as much liquid and then top the rest of the drink. You can even swirl the drink in the shaker a little before you pour to help the foam settle.

no that’s the way you’re supposed to do it. it makes a insane amount of foam, i know a few people at my starbucks make it in a cold foam blender so it mixes better and doesn’t get foamy

Our SM made us all sign something promising not to blend the GTL. We were all doing that to save time (and because it mixes better), but she told us someone called to complain that their delicious chunks of green tea were missing. =0/

I just shake and then pour the drink into the cup, then pour the foam out of the cup, and pour what’s left in the shaker to fill to the top. It’s supposed to have *some* foam now that we shake it in the shakers instead of building them in the cup like we used to, but I’ve seen ppl pour the leftover drink left in the shaker out and just leave all the foam on the drink to dissipate so idk

It won’t fully get rid of the foam but shake without the ice and just put the ice in the cup. It mixes a better with fewer shakes so there’s less foam that way as well. Then use the shaker lid and cover most of the hole with it leaving only a small bit so the foam stays in the shaker more!

it really depends on the milk! i’ve also tried filling the shaker as normal but adding light ice and filling the cup w the rest. its not necessarily procedure but if you’re making it for yourself then give it a go!

I use the shaker lid to strain out the foam when I pour. I also shake it like twice as much so there aren't clumps of matcha in the drink

I shake it really slow and kind of just tip the shaker upside down and back up (while holding the lid obviously) to try and get the matcha powder to combine with the milk.
EDIT: I still follow the recipe on the recipe card and I still shake it 10 times. I just don’t shake it so violently. And i more so try to get the contents of the shaker to hit the top and bottom of the shaker to try and get everything combined. And I would always shake the drink with the ice in it like the recipe card has to, because then the whole drink gets cold, instead of just the top of it where the ice is.

I stir it well first so I don't have to shake it as much, then tap the shaker to condense some of the foam. If it's still a crap ton of foam I use a spoon to hold it back.

Okay I was trained the proper shaker method but I’ve also been shown the blender trick, fill the cup to the third line with milk of choice add it to a cold foam blender, scoop the cordon sting matcha in the blender, add cordonatong ice and blend on 3 make perfect silky no foam matcha

Strain the foam out! By strain I mean hold it back with a spoon, like you would a no foam latte, or with the shaker lid. Once all of the liquid is out, pour the rest of the contents in!

I just fill my milk to the appropriate line, use as minimal ice as possible, shake. Pour into cup and top off with more ice. The thicker foam settle back I to the drink and the thinner foam is covered by the additional ice.
