Say I have 1 Pike (above the labeled heater that says pike), 1 dark on the dark roast and 2 blonde....one on the brew now and one on the blonde stand...you dump the oldest extra coffee urn....in the example above it would be the one on the blonde stand. Then you move the blonde that's on the brew and then you would change your tag (ours are hung in order on the side of the brewer) to pike and then brew pike. So when it goes off again in 10 minutes you would dump the pike on top if the pike label and move the newest brewed pike in that spot....etc

The way I like to do it is brew all my three for open on 1/4 batch. Set a timer and when your 10 min is done, I’ll use my fourth urn and brew Pike. Hit my timer again, 10 min is done, I’ll dump the old pike and my now new pike to the spot where that old pike was sitting. Repeat these same steps for dark and blonde. The iPad has an app for batch guidance and how much you should be brewing every 30 min. For my store 10 am is when we start brewing only pike, so check for that (:
