Chai & Iced Chai Lattes (self.starbucksbaristas)

So, I just found out today that I’ve been making Chai & Iced Chai lattes wrong (it’s only my 4th day) I didn’t realize they had water in them and have only been putting milk in them (oops!)

I know it’s supposed to be one of the easiest drinks :’) Can someone tell me the recipe/steps?

Actually iced chai won't get water (I think the idea is the ice is the water but thats just a theory) only the hot ones get water.

the hot chai latte gets hot water specifically mixed with the chai flavor, as if you were "brewing" it like an espresso shot

steamed milk on top

(i'm not sure why iced chai doesn't get it, maybe a temperature issue with the cold cups)

I’m pretty sure iced chais don’t get water in them because the temperature of a beverage will determine its taste (the warmer, the more flavorful - thanks gustatory chemistry!)

We don’t have to water down iced chais because they are colder, so the chai flavoring isn’t as strong as it would be for a hot chai :)

It's actually more like brewed tea. If you notice the pattern, all tea lattes like the English Breakfast tea latte and the London Fog tea latte, along with the honey citrus mint, are all made the same way: teabags and water to the halfway point, syrup and steamed milk (or lemonade) to the top. We make iced tea lattes the same way: half the water and steeped for five minutes, then milk, sweetener and ice. Chais are the same, just concentrate instead of tea bags.

You can make any kind of tea latte this way. If your store runs out of chai concentrate and you have chai tea bags you can make something pretty close.

Iced Chai is pumps of chai, milk and ice.

The hot one is pumps of chai first, then half way full with hot water and chai in it, then the last half is steamed milk.

The hot one is roughly half and half, like the brewed tea lattes - the exact measurements are available on the recipe cards (physical or on the iPads/computers)

Corporate has gone back and forth several times on whether hot chais get water or not (iced chai never did, at least not in the US). Honestly it’s better without it, so you didn’t really mess up 🤷‍♀️

If they've gone back and forth on it, they haven't in the past 3.5 years I've worked for the bux. It's always gotten hot water for at least that long.

They absolutely have. It has been in weekly updates at least twice since I started. Previous SM was a 15 year partner and said they could never make up their mind as the “standard” has changed back and forth several times since she has been with bux.

I just do them as milk and no water most of the time. Never have had a single complaint and they truly are way better with just milk.

The water in the hot Chai Tea Latte helps the Chai flavors "bloom." I train to fill it to just below the bust line on the siren, then milk up the rest.

I've heard "siren's eye" as well but I've never found that a reliable measurement. She moves around on the seasonal cups. I find the top line of the milk box is closer to the middle of the cup and they don't move the drink boxes.

That's how I remeber the hot drink. Pumps of chi, water to the eyes of the siren, then heated milk.

Iced is just the chi pumps, milk and ice.

If you’ve never had anyone complain, that tells us that the water doesn’t make much of a difference anyway lol. I used to have tons of customers who ordered no-water hot chai lattes.

Super random, but I just had a flashback to Oprah Chai LOL.

I've never made them with water. A customer came in one day and I made it the standard way, they were like "I like mine without water, thank you" and it just made me nervous. Been that way since. Nobody ever complains. The Starbucks across the parking lot gets the most flack because they do and everybody hates it. Nobody at our Tarbucks does it standard. 🤷🏾‍♀️

I’ve been at my store for like 5 months and we’ve never put water in the chai’s 😂😂 never had anyone complain. All the baristas would just get super confused when we got a tag that said no water bc we had no idea

No one ever puts water in the iced or hot chais. Many guests specifically ask for no water as well so I think you're good!

Not anymore. Last I heard the standard had changed to rove water from them, unless you were brewing it with tea bags.
