One of my coffee tastings I did decaf pike with a biscotti. I went with the theme that I wanted something very classic and accessible- decaf pike is something many Starbucks serve every day but I don't think our decaf options are honestly talked about very much, and for some percentage of our customer base, that's all they could have. I got some good feedback with the group I was running the tasting for- people said they often saw customers get the exact combo, lol.
I'm not with Starbucks at the moment so I don't know anything about a white chocolate chip cookie, but assuming it's what comes to mind, I would want something a little stronger and not as sweet to pair it with. Black teas have decent caffeine still, so if you want to go my route with decaf coffee, I could honestly see pairing it with some decaf espresso shots. Or a french press of decaf Sumatra or decaf espresso if you're doing a French press (most coffee tastings do. But I think the shots would taste good, lol) You can take some decaf espresso from the hopper and use that for a French press. That's also a good experiment to see how it compares brewed different ways - could pair it would both shots and pressed.
Decaf items can still legally have up tp 7% of the original caffeine content, but probably not at concerning level.

Strawberry purée, soda water, a hit of oat milk and a single shot in a tall cold cup (with ice) would be a really tight pairing in my opinion! You could even go the decaf route for spro, make it a double so the espresso is the real hero while still being light enough to pair with white chocolate
