Hey OP, I know you didn't make this and all, but next time they come it, hand them the empty cup and say "if it doesn't fit in a single cup, we can't make it"
Might make for a hard conversation with the customer but it saves from dealing with a lot of other issues. We can refuse to make a drink if it doesn't fit in the cup. That came from a weekly update directly. To avoid more confrontation, get a shift or the manager when they come in or at least just apologize once and had them the phone number for customer service [1-800-STARBUCKS] (1-800-782-7282).

I'm really stingy about this type of thing. I will split a frappuccino, but they will only get the full amount of the size they ordered.
If the shots/frap roast/milk go over the first black line I will dump it out. They ordered a venti, they will get a venti. If they want it split, I will make it in one venti, and split it into two half full cups. I dump the extra.
If they want 12 shots, they'll get however many fit into the space where the roast/milk goes. If there's no room for milk or frap roast after the shots well, I'm following the beaverage routine and that's what they ordered.
