Your store is nuts, no point pulling up the mats if you don't immediately clean the floors. In my city, midday one person pulls mats and sets them somewhere out of the way, floors are then swept and mopped (and dried if low traction like tile), then mats are sprayed with cleaner and wiped down with the mop before being put back in place. On clean plays they will get the deep scrubbing.

my store usually sets aside the mats, near our back door cause we have space around there, and then two people sweep and then mop the floors as soon as they can when we aren’t busy. then we just put back the mats and once they’re done

During closing shift, we'd mop the cafe and stack the mats. The opening baristas would do the bar floors and replace the mats.
Considering a 10pm close, mats probably got stacked up somewhere between 7-10pm, normally while cafe floors were getting cleaned. Occasionally maybe 5-6pm if it was quiet.
Stacking them at noon - 3pm makes no sense, it's almost like they're only there for peak...
